Preparation
Prepare the leeks by cutting the whites into thin strips.
Heat the ghee (or olive oil) in a pan with all the spices: turmeric,cumin seeds, coriander, cinnamon and grated fresh ginger... Mix it all together for 1 minute over medium heat. Be very careful not to burn the spices!
Add the seasonal vegetables that you have previously cooked.
Add the squeezed lemon juice, chopped fresh parsley and fresh coriander.
